Chinese Preserved Olive & Chicken Oats with Sunny-side Up Egg
Ingredients

Yield: 1 Portion
- 80g of chicken (skinless & sliced)

- 1 clove of garlic (chopped)

- 6 tbsp rolled oats

- 170 ml water

- 1 egg

- Pinch of black pepper

- 1/8 tsp of soy sauce

- 1 stalk spring onion (finely sliced)

- 3/4 tbsp of Chinese preserved olive

Procedure
  1. In a pan, add 1/4 tablespoon of oil and fry chicken along with the garlic for 2 minutes or until just cooked. Place this aside.
     
  2. Toast oats over medium high heat for approximately 3 minutes or until starting to brown and fragrant (this step is to increase the oats fragrance and prevent oats from getting mushy).
     
  3. Set oats aside and boil water.
     
  4. Once water boils, put oats in and stir continuously for 4-5 minutes, until all the liquid has been soaked up.
     
  5. Mix in chicken and place it into a serving bowl.
     
  6. Put 1/4 tablespoon of oil into a frying pan and fry 1 egg. Season with black pepper and place it on the oats once its cooked. Drizzle soy sauce on the egg.
     
  7. Finish with 3/4 tablespoon of chinese olive and sliced spring onion.
