Healthy Oatmeal Kimchi Pancake
Ingredients
  • 200g cabbage kimchi, cut into small pieces
  • 1 tablespoon of kimchi juice
  • 2 stalks of spring onions, chopped finely
  • Half teaspoon of sugar
  • Quarter cup all purpose flour
  • Quarter cup Quaker instant oatmeal
  • Half cup water

 

Procedure
  1. Blend the instant oatmeal in a blender into a fine flour
  2. Combine the kimchi, kimchi juice, spring onions, all purpose flour, oatmeal flour, water and sugar and mix well to form the pancake batter
  3. Heat a non-stick pan over medium-high heat and add a thin layer of cooking oil
  4. Pour half the batter into the middle of the pan and spread it out
  5. Flip after 4 minutes or when brown, adding another thin layer of oil before flipping
  6. Cook the other side for another 4 minutes or until brown
